Black Bean Salsa...

The first time I had this amazing salsa was at my best friends house, her sister made it. WOW, the BEST black bean salsa ever... like out of control good! Made it two times this weekend good! So perfect for your 4th of July parties!

After tasting this, I just had to share...

2 15oz cans black beans, rinsed & drained.
2 TBS chopped pickled jalapenos or fresh jalapenos
4 cloves minced garlic
3 TBS olive oil
1 10oz package frozen corn(I use Trader Joes roasted corn)
1 cup diced onion
1/2 cup diced red bell pepper
1 large tomato seeded & diced
3 TBS chopped cilantro
3 TBS fresh lime juice
1 TBS chili powder
2 tsp ground cumin

Cut and combine all ingredients and serve with tortilla chips. So simple and sooooo yummy! Ooooh I also like to kick up the heat, so I add extra hot peppers, any variety will do.

  5. I starred this recipe in Google Reader & finally made this recipe this week. I only made a 1/2 of a recipe which was a BIG mistake because everyone loved it & ate almost all of it(there were only 3 of us)!
